WHOLE30(28) ROUND 2

I still have some vacation photos to share [though it’s hard to compete with the turtles] in due time. But I’m taking this opportunity to share that I am doing my second whole30 challenge! It will actually be a whole28 since February is a short month – thank god for small miracles! This time around I am approaching this with a little bit more organisation. When I did the last challenge in August, fresh fruits and vegetables were abundant and weekend visits to the market made it easy to have supplies on hand to make whatever whenever. Though there was always the question of what do I make today? Or just too lazy/hungry/missing ingredients to make a proper fulfilling meal.

So last night I sat down and made a list (one of my favorite pass-times) of monday – friday meals. I made a batch of my favorite vegetarian stew and some quick and easy lentil soup to get the week started, made a list of missing ingredients for other meals to come and made sure I would always have on hand some snacks before I hit the gym each night, something to satisfy my sweet tooth with lunch and dinner and sufficient eggs for breakfast.

With a game plan for the week in place, I am actually not worried at all. In fact I am looking forward to putting some good foods into my body for the next 4 weeks.

  • OMG!! Good for you Em!! How do you do it especially at this time of year ?? Maybe with a lot of soups/stews/chillies etc ;)
