RECIPE | SAINT PATTY’S DAY PANCAKES

Green pancakes on Saint Patrick’s Parade day has been a tradition I do my best to continue every year. This year, we took it to a whole new level by adding Guinness to the mix and I tried my hand at making shapes more complicated than blobs. Though you couldn’t actually taste the beer in the end result, the flavour was very good. I would have to say they were a success

INGREDIENTS:

3 cups of plain flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons sugar
3 eggs, separated
1 cup of Guinness at room temperature
1 1/2 cups milk
1/3 cup melted butter
optional – green food colouring

Sift the flour with the baking powder, salt and sugar. Separate eggs, leaving whites in a bowl aside. Beat the eggs yolks in a large bowl. Stir in the beer, melted butter and milk. Stir the flour fixture into the wet mixture. Beat the egg whites then stir into your batter. Heat a greased pan on medium heat.

Pour desired amount of batter onto the pan, turning when the outside edges of the pancakes start to bubble. *To make special shaped pancakes, pour the batter into a plastic kitchen bag and pierce a whole in one corner in order to make an outline of the shape and then fill it in with batter.
